When I was looking for a little relaxation, I needed some food to take my mind off things. I saw that the major chain stores were carrying only sweetened products, I went searching for a healthier alternative. Before I go any further, I want to explain that I love sweet foods and consider myself a “sugar free dessert” gal. Now, that I’m on a vegan diet, however, I do enjoy many sweet treats. I’ve written a recipe for an oatmeal raisin chocolate cake that makes three beautiful white layers. You could actually add in a little oatmeal to the batter to make it even fluffier. Then again, if you’re feeling a little less sweet, you could also add in some applesauce, cinnamon, or lemon juice to the batter.
